OK, before you dismiss this recipe because you think it is lacking everything a pancake needs, let me state two things.
one. This recipe is delicious and easy! My husband and I only substitute various ingredients so our son can eat it too. We find it makes us healthier in general but we can also indulge in the regular pancake if we choose to. However, we think these pancakes are the bomb and feel a little better indulging in something like this.
two. With that said, of course these pancakes taste a little different. But they are still good!
We used this recipe from Food Hero and modified it to fit our needs. You can visit the link for the full recipe, but our modified version includes the following ingredients with our changes in bold:
1 1⁄4 cups
1-1 ratio gluten-free flour (We used Bob’s Red Mill)
sugar (I like mine a little sweeter!)
coconut oil (Just make sure you melt it first if it is hardened)
I would recommend doubling the recipe. We double it for ourselves because my husband is quite the hearty eater and Emmett is eating this with us. Oh, and that eating for two while you are pregnant is currently sort of happening with me 😀
