I have a pretty terrible sweet tooth that you’ll probably hear about any time I post a dessert recipe. While this recipe isn’t a dessert exactly, it does satisfy my sweet tooth. I found these energy bites when I was pregnant my first time. They were so easy to make and I had high hopes they would restore my energy. While I am not entirely sure they restored all of my energy, they did help give me an easy snack fix. At roughly 100 calories a ball, these energy bites are a favorite around here.
What kinds of Ingredients do you want to use?
I try to use the best ingredients I can find when I make these: certified gluten free oats, natural peanut butter, raw honey, and homemade vanilla extract from my mother-in-law!
Toasting the coconut is my favorite part and while you should be using unsweetened coconut for this, sweetened tastes great but is just not as healthy! Anyways, toasting the coconut makes my home smell amazing and I look forward to it every time. I simply stick my coconut onto a metal pan (usually like a cake dish) and stick it in the oven on HIGH broil. Watch it closely as it only takes a couple minutes for it to go from white to black and you don’t want either of that! Take it out when it has that warm brown color on top and then simply add it in warm!
Also, dark chocolate of 70% cacoa would be ideal for this recipe to take on more health benefits. But I know in our home that isn’t always possible or available. Just keep in mind what you are using and how much you should be consuming. Though I dare you to not eat a couple energy bites in your first sitting 😉
